This is, first of all, an author’s reading of the culinary traditions of the south of Russia. Dumplings with Black Sea flounder, Kabardian lamb loin, Abkhaz mandarin jam – in each dish, the restaurant team managed to catch a delicate balance between the original Caucasian culinary, watered by the sun, and their own gastronomic know-how.
